Spirit Works Straight Wheat Whiskey is a grain-to-glass wheat whiskey from Spirit Works Distillery in Sebastopol, in Sonoma County, California, founded by Timo and Ashby Marshall and run on a batch-by-batch philosophy where the distillery mills, mashes, ferments, distills and barrels everything on site. The wheat whiskey is made from 100% organic red winter wheat grown in the Sacramento Valley, aged a minimum of four years in full-size American charred oak barrels and bottled at 90 proof.Wheat whiskey is the gentlest American style, and Spirit Works describes this one as welcoming and familiar from the wheat yet surprisingly complex, with butterscotch and tobacco on the nose, graham cracker, caramelized sugar, sweet tea and toasted walnut on the palate, and a finish of cocoa nib, vanilla and stone fruit.
